Each month, I'll feature a grower, supplier, producer or group. This month it's 'A Taste of the Bush'.
In their own words:
"We've been operating now for about fifteen years and have tried to create interesting and different ways to incorporate Australian indigenous foods into a variety of different products.
We make a range of caramelised vinegars, reduced with ingredients such as Bush Tomatoes, Wattleseed, Lemon Myrtle, native peppers and various other indigenous foods. To complement these we also have a range of infused Macadamia oils and native flavoured dukkahs.
We have our own cookery books with tried and tested, simple recipes using these products. We carry a good range of the herbs and spices themselves and a few of our own blends. All of our products are our own original recipes and to help familiarize our customers with these indigenous flavours we visit schools, retirement villages, various clubs and groups giving cooking demonstrations and talks on how to use them."
